Seared Golden Grind Fish

Ingredients:

  • 400g Rockling fish fillet
  • 1 teaspoon Golden Grind Latte Blend
  • 1 clove of garlic crushed
  • 2 tablespoons natural yoghurt
  • 2 tablespoon palm sugar grated
  • 2 tablespoon fish sauce
  • 1 tablespoon olive oil
  • Juice 1 lime
  • Soba noodles
  • Mixed vegetables e.g. Red pepper , snow peas carrot broccoli to stir fry
  • Spring onions and julienne ginger to garnish

Method:

  1. Combine golden grind, crushed garlic, yoghurt, palm sugar, fish sauce, olive oil and lime juice in a bowl and mix well.
  2. Cut fish in to 4cm portions and add to the marinade, mix well, cover and refrigerate for 1 hour.
  3. Cook soba noodles to packet instructions refresh and set aside.
  4. Cut vegetable into slices for stir fry.
  5. In a fry pan put 1 tablespoon of olive oil and fry the fish for 2-3 minutes each side or until cooked through. Set aside. Then quickly fry the spring onions and ginger until crispy and set aside for garnish.
  6. Into a wok put 1 tablespoon of olive oil and quickly stir fry the mixed vegetables until just tender, add the noodles and toss to combine.
  7. Arrange the noodles and veg on a plate, top with the fish and crispy ginger and spring onions
  8. Serve with a wedge of lemon or lime.
