What Is Matcha

Japanese Matcha tea is a fine powder made from green tea leaves, which is primarily grown in two Japanese regions: Uji in Kyoto — where our Matcha is from — and Nishio in the Aichi prefecture. Matcha tea leaves are specially shade-grown over the course of three weeks, shielding the plant from direct sunlight which contributes to Matcha’s bright green colour. Shielding the plant from sunlight also allows for an increase in the amino acid theanine, which is believed to give Matcha its distinct flavour.

The leaves are then hand-picked and go through a strict process of being steamed, dried, destemmed and deveined, before being ground into a fine powder. While this process is traditionally completed with a stone mill or a mortar and pestle, machines are now often used to mass produce the delicious powder that we know and love — Matcha!

How Do

I Use it?

As matcha is highly concentrated, a little goes a long way. It can seem costly compared to regular green tea, but its benefits reflect its price tag. Our suggested serving size is Vz teaspoon (1.5g). We have a special matcha spoon HERE if you need.

The traditional ceremonial preparation requires a whisk and a time-consuming process. Our matcha has been carefully selected to be more accessible and convenient, so you can use a whisk if desired or simply dissolve in a dash of WARM water to form a paste and then add boiling water (for a plain tea), warm milk (for a latte) or mix it in with other ingredients depending on the recipe (see here for some of our favourites).
