By the Matcha Maiden Team



Banana bun

  • 2 cups almond meal
  • 4 ripe large bananas
  • 2 tsbp chia
  • 2 eggs
  • 1/4 cup cacao nibs
  • 1/4 cup coconut flour
  • 1 tsp Matcha Maiden
  • 1 tsp Bicarb Soda
  • A squeeze of lemon
  • 1 tbsp cinnamon

Cashew cream (for the crosses)

  • 1 cup soaked cashews ( for at least 3 hours)
  • 1 tsp Matcha Maiden 


  1. Combine all ingredients for the banana buns, stir well
  2. Spoon batter into cupcake moulds
  3. Bake for 35-40 minutes at 180 degrees or until golden brown
  4. Meanwhile, add matcha into the soaked cashews and blend
  5. Once buns are cooled, pipe cashew cream mixture onto buns
  6. ENJOY!
