VEGAN CHOC MINT MATCHA PROTEIN PANCAKES

INGREDIENTS: 
1/2 cup flour (I used half oat & buckwheat)
2 Tbsp Choc protein powder @properprotein pea protein
1/2 banana sliced
1/2 cup almond milk
1 Tbsp sugarfree drinking chocolate
1 Tbsp cacao powder
1 tsp granulated stevia (as desired)
1/2 tsp peppermint extract
1/2 tsp bicarbonate soda
1/2 tsp apple cider vinegar
1/2 tsp vanilla extract
Pinch of salt

METHOD:
Blend in a blender until smooth
Cook in some coconut oil

Matcha Sauce
3 Tbsp coconut yoghurt
1/2 tsp matcha powder
1 Tbsp rice malt syrup (more to taste)
1/4 tsp peppermint extract (optional)
Blend well. Pour over pancakes

Top with fresh figs and cacao nibs for some chocolatey crunch!
