VEGAN CHOC MINT MATCHA PROTEIN PANCAKES

INGREDIENTS:
- 1/2 cup flour (I used half oat & buckwheat)
 - 2 Tbsp Choc protein powder @properprotein pea protein
 - 1/2 banana sliced
 - 1/2 cup almond milk
 - 1 Tbsp sugarfree drinking chocolate
 - 1 Tbsp cacao powder
 - 1 tsp granulated stevia (as desired)
 - 1/2 tsp peppermint extract
 - 1/2 tsp bicarbonate soda
 - 1/2 tsp apple cider vinegar
 - 1/2 tsp vanilla extract
 - Pinch of salt
 
METHOD:
- Blend in a blender until smooth
 - Cook in some coconut oil
 
Matcha Sauce
- 3 Tbsp coconut yoghurt
 - 1/2 tsp matcha powder
 - 1 Tbsp rice malt syrup (more to taste)
 - 1/4 tsp peppermint extract (optional)
 - Blend well. Pour over pancakes
 
Top with fresh figs and cacao nibs for some chocolatey crunch!
