Makes 4

4 free range eggs, lightly beaten
1 tsp natural vanilla extract
2 cups organic milk (cow’s, rice, soy or nut milk)
1 tbs MIX N MATCHA blend (plus extra to sprinkle)
2 tbs pure maple syrup

Whisk all of the ingredients together, then strain into a jug. Divide he mixture between four heatproof tea cups, then place them in a large bamboo steamer, cover with a lid and steam over a saucepan of simmering water, ensuring the water doesn’t touch the base of the steamer, for 10 minutes or until just set (don’t overcook it or it will be watery). To serve, invert the custards and sprinkle with extra Mix N Matcha powder.
