CHOC MATCHA MOUSSE CAKE

There is so much drool going on over this matcha masterpiece – let us present to you, chocolate matcha mousse cake!!!!!!! What an incredible recipe collaboration between @matcha_maiden and the amazing @emerson_cooks. It’s a match(a) made in heaven.
The Emerson Cooks team are all going crazy for #matcha!! Who are they you ask? Established in 2014, their aim was to create a 100% natural vegan granola, with zero chemicals and zero nasties! After realising there were none readily available, they went on a quest to create their own unique blend (that wasn’t deep fried! Yep, many granolas are deep fried!) Health was a major priority in delivering something that everyone can enjoy, those who are new to the ‘healthy eating lifetsyle’ and those who class themselves as ‘health freaks’.
Emerson Cooks granola has been specifically created to allow a maximum energy kick with a fantastic taste! Whether pre-workout of just for the 4am munchies, everyone will love it! It is certainly super versatile and we like to add it to EVERYTHING (and sneakily enjoy eating it alone straight out of the packet…. oops!) There’s macadamia and fig or cacao and cranberry. 100g chickpea flour
1/3 cup almond meal
3 tbsp liquid sweetener
2 tbsp coconut oil
1 tbsp cacao
NOTE: You may need to double the mix to allow for larger pan.
1 cup cashew cream
3/4 cup melted coconut oil
3 Medjool dates
1 tsp vanilla
1 tsp MIX N MATCHA
4 tbsp liquid sweetener
1. Press in rectangle pan
2. Bake in a preheated 180C oven for 10 minutes
1. Dissolve the MIX N MATCHA in 2 tbsp warm water (mix thoroughly)
2. Wizz all ingredients in blender until smooth and creamy
3. Pour over chocolate base
4. Set in fridge for at least 3 hours
These will not last long!!!
