MATCHA VEGAN PANCAKES

INGREDIENTS:

  • 1 and 1/2 cups of oats
  • 1 cup of plant based milk (or until desired consistency is met)
  • 1 tsp of baking powder
  • 2 tsp of vanilla
  • 3 tsp of Mix n Matcha
  • 2 Tbsp of maple syrup

METHOD:

  1. Blend all ingredients together in a blender until smooth
  2. Add more plant based milk if batter is too thick
  3. Add more oats if batter is too funny
  4. Blend for 2-3 minutes to ensure mixture is aerated, this will mean that pancakes rise & fluffy
  5. Preheat pan and coat with coconut oil
  6. Pour in batter to desired pancake size
  7. Wait for bubbles to form and flip
  8. Repeat until all are cooked

DECORATING:

Vegan chocolate sauce or salted caramel sauce to put with pancake stack

  1. 1 tsp of rice malt syrup
  2. 1 tsp of maple syrup
  3. Either: 2 tsp of cacao powder or 2 tsp of salted caramel hot chocolate by damn sugar
  4. Drops of hot water until desired thickness is achieved
  5. Stir all together and pour over pancake stack
  6. Layer pancakes either with banana, kiwi fruit or blueberries, with some kind of nut spread in between.
  7. To finish off, place every ingredient under the sun on top to make it look pretty, personal favourites are: loving earth cacao nibs, shredded coconut, buckinis, kiwi fruit, strawberries, blueberries and of course the beloved fig
